Two-minute blender mayonnaise
An immersion blender turns egg, oil and mustard into mayonnaise faster than you can find the jar in the fridge.

This is the recipe that convinces people the rest of the list is possible. It takes less time than reading the label on the jar you were about to buy.
Ingredients
- whole egg, at room temperature1
- Dijon mustard1 tsp
- neutral oil (sunflower or light olive)250 ml
- white wine vinegar1 tbsp
- fine salt½ tsp
Method
- Put the egg, mustard, vinegar and salt into a narrow jar just wider than your immersion blender head. Pour the oil on top and let everything settle for 30 seconds.
- Push the blender all the way to the bottom of the jar and blitz without moving it. An emulsion will form and climb up the sides.
- Once the bottom two-thirds has turned opaque and thick, lift the blender slowly to pull in the remaining oil. Total time: under a minute.
- Taste, and adjust with salt or a squeeze of lemon. For aioli, blend a crushed garlic clove in from the start.
One thing that helps. If it splits, don't throw it out. Put a fresh egg yolk in a clean jar and blend the broken mixture into it a spoonful at a time — it comes back every time.
